This is one of my most requested recipes and chances are you have probably had this in some form or another. Everyone has their own take on it. This is #1 on my top list of things I want for Thanksgiving or Christmas dinner.
1 package of Frozen Southern Style Hash Browns (the cubed ones)
1 can of Cream of Chicken Soup
1 16 ox container of Sour Cream
1 small to medium onion diced
8-10 ozs of shredded sharp cheddar cheese
1/4 cup of butter diced
1 sleeve of Ritz Crackers
Preheat the oven to 375
Spray a 9x13 baking dish with cooking spray and set aside
In a large bowl combine the hash browns, cream of chicken soup, sour cream, onion, and 8 ozs of sharp cheddar cheese.
Pour into greased 9x13 pan.
Dot the top with the cubed butter.
Top with some more sharp cheddar cheese (this is optional) and the crushed ritz crackers.
Cover with tin foil and bake for 45 minutes.
Remove tin foil and bake an additional 10-15 minutes.
This is so good! You can substitute the crackers for anything really. For instance, corn flakes mixed with melted butter. Some people use plain potato chips, the list goes on. Add as much or as little cheese as you want and any variety. I find personally that sharp cheddar is the best. Also when baking it, you want to make sure the potatoes are done. Oven times can vary.
