Tasty Finds Tuesday - Easy Taco Dip

There are several variations of this dip, but I wanted to give you my take. I made this for a going away at DH's office and it was a hit. I am sorry I didn't get a picture of this. I was in a huge hurry the morning I made this. I Hope you enjoy as much as we did.


What You Need:
1 lb of ground beef
1 small onion diced
1/2 small green bell pepper diced
1 package taco seasoning
1 can refried beans
1 10 oz container of Sante Fe Cooking Cream
8 oz tomato sauce
8 oz sour cream
8 oz diced canned tomatoes (optional)
8 oz package of 4 cheese mexican blend shredded cheese


What to Do:
Preheat oven to 375 and grease 9x13 baking dish and set aside.


Brown ground beef with diced onions and diced bell pepper in a large skillet.


Add taco seasoning, refried beans, tomato sauce, and 5 ozs of sante fe cooking cream. Just heat through. 


Pour mixture into greased 9x13 baking dish.


Mix the sour cream and remaining sante fe cooking cream together and spread on top of mixture


Distribute the tomatoes evenly over the sour cream mixture and top with cheese.


Bake at 375 for 20-25 mins covered. Take out and let cook for about 5-10 minutes and serve warm with corn chips or tortilla chips.


*You can substitute the cooking cream for regular sour cream in the meat mixture and it is still good. You will be unable to mix it with the sour cream however. 


*Before going into the oven this can also be topped with black olives. Once out of the oven you can top this with shredded lettuce for a taco salad style dip.

Tasty Finds Tuesday - 25 VERY COOL Baking Tips

I was browsing, as usual, and came across these tips! VERY cool! I learned some really neat tricks. I hope everyone has a very Tasty Tuesday.

  1. Butter and sugar can be creamed easily when butter is hard by warming the sugar slightly.
  2. Light-colored molasses can be darkened to make dark gingerbread by adding a teaspoonful of melted chocolate to each cup of molasses.
  3. Cream which is hard to whip will whip quickly by adding a few drops of lemon juice.
  4. Molasses can be prevented from sticking to the measuring cup if the cup is first greased with butter or lard.
  5. Shortening can be measured exactly. If recipe calls for 1/3 cup, fill measuring cup two-thirds full of water, add enough shortening to bring water to top of cup, pour off water and you have exactly 1/3 cup of shortening.
  6. Sour milk can be made by adding two (2) tablespoonfuls of vinegar to one (1) cup of sweet milk and then letting it stand for a few minutes. Your baking will be just as light as if real sour milk were used. Also see Handy Substitute Recipes For Baking.
  7. Whipped cream substitute, delicious in flavor, can be made by adding a slice of banana to the white of an egg and beating until stiff. The banana will dissolve completely.
  8. Cornstarch is sometimes used in place of eggs when recipe calls for more than you have on hand. A tablespoonful is used for each missing egg. In making custard, omit one or two eggs, and use cornstarch instead (1/2 tablespoon for each egg).
  9. Custards will not curdle so readily if a tablespoon of flour mixed with sugar is added.
  10. Boiled frosting will not be brittle or break when cut, if a teaspoon of vinegar is beaten into the frosting when the flavoring is added.
  11. Add one tablespoonful of jam or jelly to cookie dough. It will add flavor and make the cookies stay moist longer.
  12. Doughnuts will not absorb grease if a teaspoonful of vinegar is added to cold fat.
  13. Fruit Cake: When baking, place a cup of water in the oven to keep enough moisture in air and prevent cake from drying out while baking. Also see Fruitcake Baking Tips.
  14. Muffins: Drop a teaspoonful of peanut butter in each muffin pan, over which pour batter. This gives muffins a delightful nutty flavor. Also see 10 Tips For Baking Muffins.
  15. When a recipe calls for a quantity of melted butter, take care to measure the butter after melting, not before.
  16. To soften butter, fill a small china bowl, one just sufficiently large to cover the butter, with boiling water; let stand a minute or two or until thoroughly heated, then empty the water and immediately turn the hot bowl upside down over the butter. In a few minutes, the butter will be softened so it is just right.
  17. When separating the yolk from the white of an egg, if you drop a portion of egg yolk into the whites, moisten a cloth with cold water, touch to the yolk and it will adhere to the cloth.
  18. Never beat egg-whites in an aluminum pan, as it is sure to darken them.
  19. When baking a milk pudding, place the dish in a tin of water in the oven. Then prevents the pudding from burning or boiling over.
  20. When cream will not whip, add the white of an egg to your cream–chill it and it will whip.
  21. To avoid lumps in batter, add a pinch of salt to the flour before it is wet.
  22. How to sugar doughnuts? Shake the sugar and doughnuts together in a paper bag. The same method may be used with flour and chicken, or salt and french fried potatoes.
  23. Raisins for cakes and breads will be plump and juicy if soaked in warm water before being added to the batter or dough.
  24. Zip up your gingerbread and molasses cookies by adding a bit of grated orange peel to the batter.
  25. If chilled ice-box cookie dough shatters when cut with long sharp knife, let stand at room temperature for 1/2 hour to soften very slightly before slicing!

How adorable are these for real? As a mommy of 2 and a military wife to a husband that is gone often, I am all for anything that will help my girls get through another TDY or deployment.

A portion of the proceeds will go the Folds of Honor Foundation which is a foundation that gives back to spouses and children of those who are killed in action or wounded defending our great nation. They do so through scholarships and other assistance.

Me and My Babies Celebrate Valentines Day

Valentines Day is another one of those hallmark holidays, however, every woman I know wants to be acknowledged and shown she is loved. My DH didn't do too bad from over 8000 miles away. Since he wasn't here me and my babies celebrated together. I am very blessed that I have my 2 angels to keep my company while daddy is away. 
My Emma Bug made me a Valentine at school today. Not too bad for a 4 year old.

We got to talk to DH after Emma got off the bus. He was going to work (they are 18 hours ahead of us). Afterwards, while the Bella Bear was still sleeping, me and the Bug made yummy cupcakes. You can find the recipe here.
I measured and she poured. We also made some yummy Baked Ziti and you can find that recipe here. They only thing I did different besides cut the recipe in half was add some ricotta this time around and it was extra yummy.


Even though DH would have made this day even better, I had a fantastic time with my girls.

Tasty Finds Tuesday - Easy Cheesecake Pie

This is a very easy and also very popular pie that you can find on the back of the little pieces of paper in the graham cracker crust lid. 


What you need:
1 graham cracker crust
8 oz block of cream cheese softened 
1 can sweetened condensed milk
1/3 cup lemon juice
whipped topping or cool whip (optional)
your favorite pie filling or fresh fruit (optional)


Directions:
Beat softened cream cheese until fluffy
Add the sweetened condensed milk and beat with mixer until well mixed
Add the lemon juice mix until incorporated
Pour Mixture into graham cracker crust and chill 4 hours
Before serving top pie with a thin layer of whipped topping or cool whip and your favorite pie filling of desired.


The picture below was taken just before I put in the fridge to chill. I usually add whipped topping and fresh strawberries before serving to mine.

Just a Random Rant - And It Needs To Be Said

I was talking on the phone to another blogger friend one night before bed. In the course of our conversation some military blogs got brought up. I am just appalled at all the bashing of other military wives and other branches that go on! It is actually pretty embarrassing to tell you the truth and makes the rest of us look like idiots. Several of these blogs I followed and have since removed myself. Something you will NEVER see on this site is bashing of any kind especially military bashing. I think it shows someones true character when someone does that. 

Military wives should always stick together and who cares what branch you are in. Whether it be the Army, National Guard, Coast Guard, Marines, Air Force, or Navy! All of our husbands have a very important job to do! We need each and every branch! I just think we need to be more mindful of what we post. Of course we have free speech, but we need to be mindful of others before we go bashing someone. And if you still feel the need to bash, please make sure you post all of what was said and not just bits and pieces. What we post as military wives not only reflects on our character but that of our husbands'. Remember that next time you go to type. Things we type, unfortunately, can get them in trouble at work for something they didn't even do.

There are many many more but you get the point. Each and every one of us need to think before we type on a public blog. You have no idea what harm you can do.

Hats For My Girls

A few weeks ago a stumbled upon a local military wife who made crocheted things for kids. One of the pictures she has posted were her owl hats and I fell in love with them. They are so adorable. So naturally I contacted her about making some for the girls. Which she did and they absolutely adore them! They won't take them off and have even asked me if they could sleep in them. 


The quality is top notch and they are stretchable so they can grow with the girls. I encourage you to visit her Facebook page, Kate's Crochet Crafts and see all the adorable things she can do. I do know she does more than just owl hats. She can do a variety of different animals. I am sure she can ship out of the area for a small fee.
