Totally Random

Me and the Bella Bear ran some errands this morning so I can make DH a steak tonight for dinner..yummy! 


It is so beautiful outside today! 62 degrees here in NJ!!! It is supposed to be winter I thought. Am I wrong?


I am very much looking forward to girls night tomorrow with some of my favorite ladies. Pics will be posted :)

Tasty Finds Tuesday - Baked Ziti on a Budget



I love it when you can just go to your cabinets or fridge and pull out random things to make a yummy dish. I had a little help from MidgetMomma.com on this one. She helped me make it a little easier and a little cheaper and we like cheaper in this economy. I had everything but the cooking cream in my pantry so this was super cheap and easy and not to forget delicious.


I served this last week at Bella's party and it was gone by the end of the night. 


Notice there is no ricotta or cottage cheese in this. I didn't have any on hand and to be honest it was MUCH better with the cooking cream but if you like ricotta take an 8 oz container and mix it with one beaten egg and toss it with the noodles before assembling. You can also keep the cooking cream for an extra cheesy, creamy Baked Ziti!


What You Need:
1 pound or 16 ozs of Ziti
1 pound ground beef
1 medium onion diced
1-2 cloves of garlic minced
2 jars of spaghetti sauce
1 container of Tomato Basil Cooking Cream
12 slices of provolone cheese (this can be eliminated but if you do, up mozzarella to 16 ozs.)
8 - 10 ozs shredded mozzarella


What to Do:
Preheat oven to 375 degrees. Grease a 9x13 pan and set aside.


Cook Ziti according to package directions. Make sure you cook it al dente.

Brown meat with onions and garlic in a skillet until browned and onions are soft.


Mix in spaghetti sauce and cooking cream


Now it time to assemble. Put in half of the cooked Ziti in the bottom of the greased pan followed by half of the sauce mixture, 6 slices of provolone, and 4 ozs of mozzarella. Then repeat one more time. The rest of the Ziti, sauce mixture, provolone, and mozzarella in that order. 


Cover and bake 30-35 mins. Remove foil and bake an additional 5-10 minutes. 


Let cool slightly and serve. This is good served with garlic butter rolls and a side salad.

A Little of This and a Little of That

It has been a LONG week end. Both of the girls have been so fussy. Saturday night Emma Bug went to bed with a fever and a stuffy nose and Bella Bear woke up this morning with the same thing. It just seems to be a common cold and thankfully their fevers aren't high, but boy are they are in rare form today. HELP! On the bright side they did get to go to a birthday party over the week end and they had a blast playing with all of the of the other kids. 


Emma goes back to school tomorrow as long as she is feeling good. Hoping both of my girls are all better by tomorrow. I hate it when they are sick and there is nothing you can do for them. 


DH is going TDY end of the week. BOO! Thankfully though he will only be gone for 2 weeks this time around and I will be working on a gift for him with a photographer friend of mine, Erica Mahan Photography. She is so super talented and has been taking pictures for us for almost 4 years now. She also has a Facebook page. Her talent is all over my page. All of the pictures of the girls you see and the family picture was taken by Erica Mahan Photography. I have been blessed in my life to have a very good friend as a very talented photographer as well. Wednesday is girls night out!! YAY!! I am so excited. It has been forever since I have gotten out of the house with my friends. We are going to The Cheesecake Factory. Now Thursday while Emma Bug is in school one of my lovely friends will be watching Bella Bear for us while me and Ted go out. That is going to be nice since he will be gone over Valentines Day.

Lots planned for the coming week. Girl's night with my friends on Wednesday Night and DH and I have a date on Thursday. He is leaving is again for 2 weeks to teach a class in Korea. Thankfully it is only 2 weeks :)

Wordful Wednesday
Courageous


About a week ago my Kim picked up Courageous from Redbox. Honestly I thought it was going to be more of a "Kim movie". It turned out to be a great movie if a little bit of a choked up tear jerker. While it might not hit you in the breadbasket if you have no children or are perhaps, a cyborg. If either of those parameters do not fit you - it will choke you up and make your eyes water which women call crying and men call getting a gnat in your eye.

It, unlike most modern movies, had human moments. It was virtually free of flashy effects that enable most movies. The theme was was simple - the characters real. None put off the 'holier than thou' vibe. You could relate to the people in the movie very easily. Which made the human moments. There was action and gun play so as to keep it from being too preachy.

In all it was what I would consider a good movie. I am sure Kim will be purchasing it on DVD. I look forward to the next movie that the studio puts out. I encourage all dads to watch this movie.

Bella Bear's Birthday Party

Three years ago yesterday at 1:08 PM my last little girl was born weighing 9 lbs even and 21.5" long! I seriously remember it like it was last week. I remember every little detail from that day and the day before. The fact the epidural didn't work properly the last 20 mins and the shot they gave not kicking in until after she was born aided in that a touch. As soon as you see their precious little faces you are instantly in love! What is that quote from the  movie "Where the Heart Is", "How can you love someone so much that you just met?" You love them when you carry them inside of you but when they are born it is just a whole new level!


Well we had her a mini party on Sunday with a few very close friends. Bella is not fond of large crowds and the weather was nasty on the day her actual party was supposed to be so we canceled it. She had a blast at her little get together. I made baked ziti (look for super easy recipe next week) with butter garlic rolls and some last minute boxed cupcakes. Yes I know, bad mommy for making cake out of a box, but hey, they weren't too bad and she enjoyed them so that is all that matters right? 


Well, I am off for the day, but will leave you with a few pics from her party. I have a super cute pic of all the kids that were at her party, but have a blogger friend that prefers her kids pics not to be put up on public blogs and I respect her for that. Tasty Finds Tuesday - Black Magic Cake with Chocolate Fudge Buttercream Frosting

A while back on went on the lookout for a chocolate cake and it had to be sweet like a box, but taste homemade. Oh and it had to be moist! The icing had to be yummy and sweet but not overly buttery. All of the other cakes I had tried were not sweet or were bland. My DH does not like a buttercream that is mostly butter, we will forgive him. Anyway, so after a few failed recipes I found the infamous Black Magic Cake!! Oh my! Pure heaven! And the icing recipe is a whole different one. Not the typical one that is called for. Both recipes I found online and they needed NO changes. The cake recipe is a popular one. It is the famous Hershey recipe changed up a bit. I believe, please don't quote me, but I believe Hershey is the one that came up with this recipe and called it the Black Magic Cake. And before you go all, "yucky coffee" on me, you CANNOT taste the coffee. It is there to enhance the flavor of the chocolate and it does just that. The icing recipe I found on Allrecipes.com


Black Magic Cake


What You Will Need:
1 3/4 cups of all purpose flour
2 cups sugar
3/4 cup unsweetened cocoa
2 tsp baking soda
1 tsp baking powder
1 tsp salt
2 eggs
1 cup strong brewed coffee
1 cup buttermilk
1/2 cup vegetable oil
1 tsp vanilla extract


How To Make It:
Preheat oven to 350 and grease and flour 2 round cake pans, 1 9x13 pan OR you can make cupcakes. This makes about 30 cupcakes (give or take) if making cupcakes use cupcake liners of course.


In a large bowl or stand mixer mix flour, sugar, cocoa, baking powder, baking soda, and salt until well mixed. Make a well in the center.


Add eggs, buttermilk, vegetable oil, and vanilla extract. Mix for 2 minutes with electric mixer scraping the sides of the bowl half way through. 


Add the coffee and gently stir until well blended. The batter will be very thin.


Bake at 350 for 30-40 minutes for cake and 15-25 minutes for cupcakes or until toothpick comes out clean.


Cool on wire racks and fill and frost with your favorite frosting.


Chocolate Fudge Buttercream Frosting


What You Will Need:
1/2 cup butter (1 stick)
1/4 cup vegetable shortening
1/3 cup unsweetened cocoa
2 cups of confectioners sugar
2 tablespoons of heavy cream, half and half or milk
1 cup of hot fudge topping (I use the Hershey's hot fudge sauce)
1 tsp of vanilla extract




How to Make It:
Cream the butter and shortening together


Sift the cocoa with the confectioners' sugar and add to the creamed mixture. Mix together adding one tablespoon of cream at a time. Do not add more than 1/4 of cream or milk.


Add the vanilla extract and hot fudge topping and blend until smooth and creamy.


Add to your favorite cake. In my case it is the Black Magic Cake above. It gives you a death by chocolate experience. You will need lots of milk to drink!

Taking the Week End Off

My baby will be turning 3 on Monday so we are having a small get together and spending some time with her this week end. I hope everyone has  a very blessed week end. And happy birthday to my Bella Bear.
My Bella Bear almost 3 years ago. This is the day we brought her home.
And this is the princess now. Love my angel.

Are You Courageous?

Tuesday night me and my husband sat down after the girls were in the bed and watched the movie, Courageous. I had wanted to see it in theaters, but didn't get the opportunity. I am only a little glad, but only because I cried like baby throughout the entire movie! Big huge crocodile tears! I think every daddy and even mommy should sit down and watch this movie. 


It is about 5 men who are encouraged and challenged to become Godly fathers due to a tragic event that happens to one of them. Sometimes God allows the bad things to happen to open our eyes and this movie proves that. I have NEVER been so moved and so challenged by a movie before this one. This movie challenged me to not just be a "good enough" mommy but to be the mommy that God expects of me. To show Christ in the way I walk and talk to my girls. To bring out in them the Godly women God expects of them. 


The closing speech in this movie was so moving and spoke to my heart even though I am not a daddy. I can't speak for my husband in how it spoke to him, but I do know he liked the movie and I have noticed some differences in his interactions with the girls. He has always been a good daddy, but its the little things since he has seen this movie. 


This very moment with our kids just very well might be our last. That is the sad reality. You never know what tomorrow or even 5 minutes from now is going to bring. James 4:14 says, "Whereas ye know not what shall be on the morrow. For what is your life? It is even a vapour, that appeareth for a little time, and then vanisheth away." I don't want regrets when it comes to my children. I don't want them to guess whether or not I was a Christian or whether or not I was Godly. I want them to see Christ in me! I want them to see Christ in me and their daddy. In the way we act with each other and with them.


I don't know about anyone else, but there is nothing I find more attractive than a man that loves the Lord with all of his heart and soul! A man that portrays Christ in his walk and his talk. A man that loves his wife and children with all that he is. A man that is a spiritual leader in the home. A man that prays and seeks God in everything.


I challenge all of my readers to watch this powerful and moving film. I promise, you will not be disappointed and I know, if you let Him, you will take away something with you when its over.

Thankful Thursday - My Bella Bear

January 23, 2012 will be 3 years since I had my last little girl! I can't believe she is almost 3!! I found out I was pregnant with her when her daddy was TDY. My oldest daughter was only 14 months old. We had an air show on base and my daughter needed some meds so I fought the crowd and we went to Wal Mart. I was over a week late so I thought that maybe I should pick up a pregnancy test. Mind you, before I had my first little girl I had problems with my cycle so I just thought it was messing up again. I didn't feel pregnant at all. 


Well, after we fought traffic to get back home I went into the bathroom, took the test and then sat it down while I washed my hands. I knew it would be negative! When I picked it up I literally started shaking and crying! I always knew I wanted another one, BUT we wanted to wait until our oldest was 2 before we started trying. She was just 14 months!! What was I going to do with Emma Bug still being so small? I called my husband and told him the news. I asked him if he was mad and he then replied, "Why would I be mad about a baby?" I knew he wanted to wait too and plus my baby sister was 6 weeks pregnant with her first!!


After the initial shock of course I got excited! Another baby! The Bug would have a sister or a brother to play with. 


My pregnancy was the pits! I was sick all the time, but still managed to gain over 40 pounds! Anyway, on January 22, 2009 I was put in the hospital to start induction. And on January 23, 2009 at 1:08 PM just 3 hours after they started the potocin and minutes after they broke my water, my angel was born and she was just perfect!


She seriously was the best baby ever and thank the Lord because her sister was just 22 months when she was born. 

So, of course, what I am thankful for today is my Bear! She continues to bring so much joy to my life and I do not know what I would do without my Bella Bear! I want to thank our good Lord for allowing me to raise her! Her and her sister are the light of my life and blessings from above!

Wordful Wednesday - SOPA Delayed



"Racism" in the GOP Debate

First right out of the gate I do not believe in race. Race is a made up word. Darwin did not invent the word but did include in the title of his most popular work. On the Origin of Species by Means of Natural Selection, or the Preservation of Favoured Races in the Struggle for Life - Yes favored races. It this work races bear the responsibility to 'purge' the weaker races. Very easy to see how could that mentality possible be a problem. This would make the word race itself support that one group is somehow different than another.

The Bible is clear on this point in Ephesians 4:5-6 One Lord, one faith, one baptism, One God and Father of all, who is above all, and through all, and in you all. While melanin content might differ from one person to the next - the idea of races is a racist one. To be a racist is to acknowledge that races exist. They do not. Darwinian teaching says it, but the Bible is clear.

Alright so history accomplished onto the GOP debate. Now this was most pointed in the Juan Williams vs Newt Gingrich in the debate. Juan attempts to play the race card by suggesting that "The Food Stamp President" has racial overtones. Newt, being hip to the game, does not answer the question asked - he attacks the reason the question would be asked in such a manner. Newt shuts it down. Newt is perhaps the smartest of the candidates. He has been around for a long time and I would love to see him eviscerate Obama in debates.

Let me be clear. There are no races. Race is a made up invention. Acknowledging race is to acknowledge that melanin content is somehow a limiter upon success because someone else is keeping you down. It creates an entitlement mentality. Were this true - no one could break out of this box, but here in America we can and do. All can and do. People ARE judged by the content of their character. No one goes to prison simply for having too much or too little melanin.

Democrats have idea that races do exist. That somehow one race needs more assistance because they are more [insert an adjective] than another race. In essence they bribe that same group with continued assistance - to garner votes to keep them in power. This is another form of slavery. This same attitude is played out in Juan's question which is a not very well accusation of Newt being racist.

When accusing of racism with the pointing of a finger, four fingers point back at yourself. Whoever says "...racist..." Is the racist because they acknowledge its existence. When in fact it does not exist at all. If you think it does exist - then - the same mentality applies. The only people who want race to exist is people who stand to gain something from its existence.

Tasty Finds Tuesday - Chicken Pot Pie

Verse of the Day:

Time for Tasty Finds Tuesday. I have posted this recipe in the past and since this was last night's dinner and so extra yummy I decided to post it again. I originally got the recipe at Pillsbury.com and have since made a couple of very small changes to suit my families' tastes. I PROMISE you will not be disappointed with this recipe. Pillsbury has a lot of yummy recipes I have discovered.


What you will need:
1 box of refrigerated pie crusts
1/3 cup of butter
1/3 cup of chopped onion (about 1 small/medium onion)
1/3 cup of flour
1/2 tsp of salt
1/4 tsp of pepper
1 3/4 cup of chicken broth
1/2 cup of milk
2 1/2 cups of shredded chicken (I make my own. I simmer 1 large chicken breast and 1 large thigh skin on bone in, in some chicken broth, bay leaf, sage, salt, and pepper on the top of the stove until cooked. Make sure you have enough broth to cover the chicken.)
1 1/2 cups of frozen mixed veggies, thawed
1/2 to 3/4 cup of potatoes (You can either the frozen cubed hashbrowns thawed of course OR you can steam one medium potato in the microwave. When it is cooked remove the skin and cube into small chunks.)
1-3 ozs of velvetta cheese


Directions:
1. Heat oven to 425 F. Place one of the pie crust in the bottom of a 9" glass pie pan.
2. In a medium to large saucepan melt butter over medium heat and add chopped onion. Cook onion 2 minutes or until softened. Stir in flour, salt, and pepper until well blended. Gradually stir in broth and milk cooking and stirring until bubbly and thickened. Add velvetta cheese and stir over low heat until melted. (you cannot taste the cheese. It is just to make it creamier. If you want a cheesy pot pie, add more)
3. Stir in chicken, mixed veggies, and potatoes. Remove from heat. Spoon mixture into crust lined pan. Top with second crust. Seal edge and flute (aka make it pretty) Cut slits in several places on top of crust. Then brush with a beaten egg and add a sprinkling of salt and pepper to make it shiny and pretty and of course YUMMY!
4. Bake 30-40 minutes or until crust is golden brown. During the last 15-20 cover edges, if necessary, to prevent excessive browning. Let stand 5 minutes before serving.

You would never know that with all of the Josh Groban and Casting Crowns I post that I am a die hard rock n' roll fan!!! Aerosmith, Nickelback, Creed, and Heart just to name a few. Something you will NEVER see me post or say I like would be R&B, Country(unless it is a song about our troops, daughters, or gospel being sung by a country music star) and Rap! I am sorry, but just because I am from down south does not mean I like Country, so.....stop asking! Nothing much planned for me and the Bear today. We have been busy bees most of this week so I think we are just going to chill here at home today, wash some clothes since I am so behind (more than usual)

We have an extra long week end coming up with MLK Jr day on Monday so I am thinking me and the DH are going to take the girls and do something fun with them. I would love to take them to see Beauty and the Beast 3D but I am not paying that much money to see a movie I have seen already so any suggestions would be welcome.

I trust everyone has had a good week. I have a busy day today so this post will be short. Being here in NJ I have found it rather hard to find a church for a few different reasons. Most of you know my dad is a pastor and a rather good one. I swear I'm not just saying that because I am his daughter. He really is. Ask anyone who has heard him. So after being raised where I KNOW I am going to get spiritually fed whenever I walk into the church it is really hard to sit under a pastor who sounds like he woke up that morning and prepared the day's sermon! It is very frustrating.


So today's thank you is, for modern technology! Thanks to You Tube and some dear people at the church, and of course my daddy, I can listen to my daddy 3x a week like I used to be able to. I KNOW that whenever I sit down to listen to him I am going to get fed and hear the truth!
